Al girar la copa el l\u00edquido se adhiere ligeramente a las paredes de \u00e9sta cayendo r\u00e1pidamente las l\u00e1grimas.<\/p>\n<p><strong>Nariz:<\/strong> Surgen notas de la tipicidad del agave Angustifolia, c\u00edtricos maduros, pi\u00f1a miel madura, destellos de mandarina; inmediatamente sobresalen los aromas herbales que nos recuerdan a pasto reci\u00e9n cortado y mentol, y finalmente se aprecia la dulzura del maguey cocido, melaza, miel de agave con un elegante y ligero ahumado.<\/p>\n<p><strong>Gusto: <\/strong>Es franco en su arranque, notas dulces de fruta madura, mieles y esas notas caracter\u00edsticas herbales que nos recuerdan a albahaca morada. Cuenta con un retrogusto medianamente largo con sabores ahumados de pan tostado y piloncillo.<\/p>\n<p><strong>Maridaje: <\/strong>Ceviches y aguachiles. Moles achocolatados, suprema de pollo o salm\u00f3n a la parrilla.<\/p>\n<p style=\"text-align: center;\"><strong>Mezcal Espad\u00edn con gusano\u00a0<\/strong><\/p>\n<ul>\n<li>El Agua Que Ataranta<\/li>\n<li>(A. Angustifolia Haw)<\/li>\n<li><strong>Volumen alcohol: <\/strong>48\u00b0<\/li>\n<li><strong>Edad del agave Espad\u00edn: <\/strong>8 a 10 a\u00f1os<\/li>\n<li><strong>Poblaci\u00f3n de origen: <\/strong>San Luis del R\u00edo Tlacolula<\/li>\n<li><strong>Estado: <\/strong>Oaxaca<\/li>\n<\/ul>\n<p><strong>Vista:<\/strong> Tenemos un mezcal abocado con gusano blanco de maguey; presenta peque\u00f1os sedimentos blancos provenientes de la maceraci\u00f3n con los gusanos en mama-juanas. Es cristalino, traslucido, con mediana densidad en su cuerpo debido al grado alcoh\u00f3lico.<\/p>\n<p><strong>Nariz: <\/strong>Indiscutiblemente predomina el aroma de gusano de maguey e inmediatamente detr\u00e1s se aprecian los aromas t\u00edpicos del Espad\u00edn: agave cocido, c\u00edtricos, pi\u00f1a miel y notas herbales como t\u00e9 lim\u00f3n, y albahaca fresca, al final se aprecian notas de aceituna verde y cierta mineralidad.<\/p>\n<p><strong>Gusto: <\/strong>Es sedoso, meloso y dulce recordando al agave cocido y miel maple, hace su presencia el sabor del gusano de maguey junto con las notas herbales y alcanfor. El retrogusto es largo y persistente, sigue siendo meloso y sedoso invitando al segundo trago.<\/p>\n<p><strong>Maridaje:<\/strong> Ensaladas frescas con queso de cabra, cortes de carne a la parrilla, postres a base de chocolate obscuro.<\/p>\n<p style=\"text-align: center;\"><strong>Mezcal Madre cuixe y Espad\u00edn<\/strong><\/p>\n<ul>\n<li>El Agua Que Ataranta<\/li>\n<li>(A. Karwinskii + A. Angustifolia Haw)<\/li>\n<li><strong>Volumen alcohol:<\/strong> 46\u00b0<\/li>\n<li><strong>Edad del agave:<\/strong> Espad\u00edn, de 8 a 10 a\u00f1os;<\/li>\n<li>Madre cuixe, 15 a\u00f1os<\/li>\n<li><strong>Poblaci\u00f3n de origen: <\/strong>San Luis del R\u00edo Tlacolula<\/li>\n<li><strong>Estado: <\/strong>Oaxaca<\/li>\n<\/ul>\n<p><strong>Vista: <\/strong>Destilado brillante y cristalino con ligeros destellos azules, totalmente limpio. Al rotar el l\u00edquido en la copa, \u00e9ste deja una ligera marca en las paredes de cristal marc\u00e1ndose l\u00e1grimas separadas que bajan r\u00e1pidamente.<\/p>\n<p><strong>Nariz: <\/strong>Primero se aprecian los aromas del agave karwinskii: fruta tropical madura, mel\u00f3n chino, lychee (lichi), tierra h\u00fameda y aromas terrosos y de pirul (pimienta rosa). Enseguida se perciben las notas del Espad\u00edn: c\u00edtricos, mandarina, lima, acetonas y notas herbales con toques de alcanfor<\/p>\n<p><strong>Gusto: <\/strong>Al probarlo la primera sensaci\u00f3n es ligeramente seco, se percibe la sensaci\u00f3n de alcohol, surgen las notas dulces de la fruta tropical: mel\u00f3n, pi\u00f1a miel madura, notas c\u00edtricas a c\u00e1scara de toronja, zumo de naranja, acompa\u00f1ados de notas herbales a pasto reci\u00e9n cortado, hinojo; se aprecian sabores terrosos ligeros y uva pasa.
